Savory Braised Beef with Toasted Coconut Rice
Ingredients
Braised Beef:
5 lbs. Raley's boneless beef chuck roast, cut into 3-inch pieces
Raley's Salt and pepper to taste
2 tbsp. Raley's Vegetable Oil
4 cloves garlic, minced
3 dried ancho chiles, seeded and chopped
2 large red onions, peeled and cut into large cubes
4 cups beef broth
2 cups red wine
2 tbsp. chopped fresh oregano
2 tbsp. ground cumin
1 tbsp. ground coriander
1/4 tsp. ground cloves
2 bay leaves
Zest and juice from 1 lime
1 cups black beans (bulk bin #557), soaked and cooked

Coconut Rice:
2 cups brown rice (bulk bin #718)
2 cups water
1/2 cup toasted unsweetened shredded coconut (bulk bin #2351), divided
1 tsp. Raley's Salt
1 (13.5- oz.) can coconut milk
1 (1- inch) piece fresh ginger, peeled and smashed
Directions

Prep: 20 minutes, Cook: 2 hours, 40 minutes, Serves: 6

1. Season beef with salt and pepper. Heat oil in a large pot over medium heat, then brown beef on all sides in batches; remove from pot and set aside.

2. Add garlic, chiles and onions to pot and cook for 5 minutes. Add beef, broth, wine, spices, lime zest and juice. Season with salt and pepper to taste. Bring to a boil, then lower heat and simmer, covered, for 2 hours. Add beans and cook for 30 minutes more or until meat is tender.

3. While meat is cooking, place rice, water, 1/4 cup coconut, salt, coconut milk and ginger in a large pot. Bring to a boil, then lower heat and simmer, covered, for 25 minutes or until rice is cooked through. Serve braised beef mixture over rice and garnish with remaining coconut.

TIP: Soaking and cooking dry beans is a two-step process. To quick-soak beans, place 1/2 cup beans and 2 cups water in a medium saucepan and bring to a boil for 2 minutes. Remove beans from heat, cover and let stand for 1 hour. Drain and rinse. To cook beans, place soaked beans and 3 cups of water in a medium saucepan and boil for one hour or until beans are tender. Drain and rinse.
