Buffalo Blue Cheese Chickpea Burgers
Buffalo Blue Cheese Chickpea Burgers
Ingredients
1/4 cup cooked red lentils
1 (540-ml.) can chickpeas, drained and rinsed
1/2 cup rolled oats
1/4 cup diced onion
2 cloves garlic, diced
2 tbsp. chopped parsley or cilantro
1/4 cup buffalo wing sauce
1 large egg
1 tsp. salt
1/2 tsp. pepper
1/4 cup breadcrumbs or chickpea flour
2 tsp. coconut oil
Hamburger buns, toasted
Crumbled blue cheese (topper)
Wing Sauce (topper)
Lettuce (topper)
Ripe tomato slices (topper)
Directions

Prep: 15 minutes, Cook: about 10 minutes, Serves: 4 to 6

1. Preheat oven broiler. Add chickpeas to food processor and pulse until finely chopped. Add to large mixing bowl with cooked lentils. Add oats, onion, garlic, herbs, wing sauce, salt and pepper and mix together. Add breadcrumbs or chickpea flour a little at a time until burger mixture is the desired consistency - they should hold together when shaped into patties.

2. Heat coconut oil in skillet over medium-high heat. Pan fry burgers until browned on each side, about 2 to 4 minutes per side. Place burgers on baking sheet and top with blue cheese. Broil for 2 to 3 minutes until cheese is melted. Top toasted buns with burgers and toppings, if you like.
