Grapefruit Marmalade
Grapefruit Marmalade
Ingredients
2 large grapefruit
1 large lemon
2 cups water
1 cup granulated sugar
2 tbsp. chopped candied ginger
Directions

Prep: 15 minutes, Cook: 40 minutes, Serves: 4

1. Peel grapefruit and lemon with vegetable peeler, taking care to not get a lot of pith. Thinly slice peel into strips. Cut fruit into chunks with a small knife, then add to a large saucepot with any leftover juice. Add water, granulated sugar and candied ginger; bring to a boil and cook for 10 minutes.

2. Reduce heat and simmer on low heat for 25 to 30 minutes. Skim off any foam and let cool. When cool, place in a jar.
