Blueberry Chipotle Pork
2 lb. pork tenderloin
Freshly ground sea salt and pepper to taste
2 chipotle peppers in adobo sauce
1/2 cup blueberry preserves
2 tbsp. lime juice
Season pork with salt and pepper. Cook on a well-oiled grill over medium heat for 30 minutes, turning occasionally. Mince peppers with kitchen shears in a small bowl. Stir in jam and lime juice; set aside half of sauce. Cook pork for 10 minutes more, brushing with half the sauce. Remove from grill and pour reserved sauce over top. Makes 6 to 8 servings.
