Blueberry Chipotle Pork
2 lb. Raley's pork tenderloin
Freshly ground sea salt and pepper to taste
2 chipotle peppers in adobo sauce
1/2 cup blueberry preserves
2 tbsp. lime juice
Prep: 5 minutes, Cook: 40 minutes, Serves: 6 to 8
2. Mince peppers with kitchen shears in a small bowl. Stir in preserves and lime juice; set aside half of sauce.
3. Cook pork for 10 minutes more, brushing with half the sauce. Remove from grill and pour reserved sauce over top.
