Chicken, Bacon and Avocado Melts
2 ciabatta rolls (in our Bakery) halved lengthwise
1 cup rotisserie chicken chunks
1/3 cup Frontera Guacamole Mix
1/2 ripe avocado pitted, peeled and coarsely mashed
2 slices Sargento Chipotle Cheddar Cheese
2 strips pre-cooked thick cut bacon halved
Prep time: 15 minutes,
Cook time: 5 to 7 minutes
Preheat oven to 425°F and line a baking sheet
with foil. Place roll bottoms on baking sheet and
set roll tops, cut side down, along side. Stir
together chicken, guacamole mix and avocado in
a medium bowl and spoon onto roll bottoms. Top
each with 1 slice cheese and 2 pieces bacon.
Bake for about 5 to 7 minutes or until cheese is
melted. Close sandwiches.
Makes 2 servings. Recipe may be doubled.
