1 cup long grain rice
Water for soaking rice
1 quart lowfat milk
3/4 cup sugar
4 to 6 cinnamon sticks
1½ tsp. vanilla extract
Prep: 5 minutes, Stand: at least 8 hours or overnight,
2. Drain water and place rice in a large saucepan with milk. Add sugar and cinnamon sticks; bring to a boil. Remove from heat and let stand for 30 minutes.
3. Remove cinnamon sticks and place in a blender or food processor. (Better yet, if you have an immersion, or hand-held, blender, now is the perfect time to use it!)
4. Add vanilla and purée until smooth. Strain into a serving pitcher (use a fine mesh sieve or cheesecloth) and chill for at least 4 hours before serving over ice.
