Ham, Corn and Tomato Cups
1/4 cup milk
1/2 cup small cubes sharp Cheddar cheese
1/3 cup diced ham
1/3 cup frozen or canned corn
1/3 cup diced tomato
1 green onion, sliced
Prep: 10 minutes, Cook: 25 to 30 minutes, Serves: 2*
2. Beat eggs in a medium bowl with milk. Stir in cheese, ham, corn, tomato and green onion.
3. Spoon into prepared cups and bake at 350°F for 25 to 30 minutes or until eggs are set in the center.
*Recipe may be doubled.
