Asparagus with Black Bean Sauce

Asparagus with Black Bean Sauce
Ingredients
1 tbsp. extra light olive oil
1/2 small onion, peeled and cut into thin wedges
1 (15- oz.) can whole baby corn (in the Asian foods section), drained
1 lb. asparagus, ends trimmed and cut into 1-inch pieces
1 small red bell pepper, seeded and cut into julienne strips
1 tbsp. grated fresh ginger
1/4 cup chicken broth
3 tbsp. black bean sauce (in the Asian foods section)
3 tbsp. mirin (sweet rice wine) (in the Asian foods section)
Directions

Prep: 15 minutes, Cook: 7 to 9 minutes
Serves: 4 main or 6 side dishes

1. Heat oil in a large wok or skillet over high heat. Add onion and stir-fry for 3 to 4 minutes. Add remaining vegetables and ginger and stir-fry for 3 to 4 minutes more or until vegetables are crisp tender.

2. Stir together broth, black bean sauce and mirin; add to skillet and cook for 1 minute more to heat. Serve over white rice.
