New York Style Pastrami Grinders

New York Style Pastrami Grinders
1 sweet baguette, cut into 4 pieces
1 (6.5- oz.) jar marinated artichoke hearts
1/2 cup sliced golden pepperoncini
1 lb. pastrami, shaved
4 very thin slices red onion, separated into rings
4 slices provolone cheese, cut in half

Prep: 10 minutes, Serves: 4

1. Cut baguette pieces in half horizontally and tear out a small amount of bread from the center to make room for the sandwich filling.

2. Drain artichokes, reserving marinade, and coarsely chop; combine with pepperoncini in a small bowl.

3. Brush both sides of bread with liquid from artichoke hearts and place 1/4 of the artichoke mixture on the bottom half of each roll. Place equal amounts of pastrami on the bottom of each roll. Top with onion and cheese. Place roll tops over filling and press down to press ingredients together.
