Marinated Chicken Salad with Chipotle Citrus Dressing

Marinated Chicken Salad with Chipotle Citrus Dressing
Ingredients
1 lb. boneless, skinless chicken breast halves
1/2 cup orange juice
1/2 cup fresh lime juice
1/4 cup extra virgin olive oil
1 tbsp. sugar
1 tsp. garlic salt
1 large chipotle pepper in adobo sauce
4 radishes cut into matchstick-size pieces
1 large orange peeled and chopped
1 avocado pitted, peeled and diced
1/4 red onion peeled and thinly sliced
1 cup jicama cut into matchstick-size pieces
1/2 cup cilantro leaves coarsely chopped
lettuce (optional) shredded
tortilla chips (optional)
Directions
Prep time: 20 minutes, Cook time: 10 to 15 minutes, Chill time: 1 hour

Grill chicken over medium heat for 5 to 7 minutes per side or until internal temperature reaches 165°F; remove and cut into thin strips. Place chicken and half the dressing in a small bowl; refrigerate for at least 1 hour or until well-chilled. Meanwhile, combine remaining ingredients (except dressing and optional lettuce and chips) in a large salad bowl. Top with chilled chicken and remaining dressing; toss well to coat. Serve over shredded lettuce topped with tortilla chips, if desired.

Chipotle Citrus Dressing: In a blender container, combine 1/2 cup orange juice, 1/2 cup fresh lime juice, 1/4 cup extra virgin olive oil, 1 tbsp. sugar, 1 tsp. garlic salt and 1 large chipotle pepper in adobo sauce; blend until smooth.

Makes 4 servings.
