Chocolate Covered Macaroon Brownies
Chocolate Covered Macaroon Brownies
Ingredients
1 box brownie mix
2 egg whites
1/2 tsp. salt
1/2 cup sugar
1 cup unsweetened fine macaroon coconut
3/4 cup Enjoy Life Gluten-Free Chocolate Chips, (optional) melted
Directions

Prep: 15 minutes, Cook: 30 minutes, Makes: 12 servings

1. Preheat oven to 350°F and coat an 8- or 9-inch baking pan with nonstick cooking spray. Prepare brownie batter according to package directions. Spread into prepared pan and set aside.

2. Beat egg whites and salt in a medium bowl until soft peaks form. Slowly add sugar and beat for about 5 minutes or until mixture is thick and glossy; stir in coconut. Spread mixture over the top of brownies.

3. Bake for 30 minutes or until a toothpick inserted in the center comes out clean and top is golden brown. Let cool completely before cutting into 12 squares. Drizzle with melted chocolate, if you like.
