Piña Colada Pancakes

Piña Colada Pancakes
2 cups just-add-water pancake mix
2/3 cup cream of coconut (found in the Liquor Dept.)
1/2 cup crushed pineapple in juice
1/2 cup water
1/4 cup chopped macadamia nuts
1/4 cup butter
1/2 tsp. ground cinnamon

Stir together 2 cups just-add-water pancake mix, 2/3 cup Coco Lopez Cream of Coconut, 1/2 cup crushed pineapple in juice, 1/2 cup water and 1/4 cup chopped macadamia nuts. Cook pancakes in a lightly buttered skillet for a few minutes on each side or until golden brown. Melt together 1/2 cup Coco Lopez, 1/4 cup butter and 1/2 tsp. ground cinnamon in a small saucepan or in the microwave. Serve warm over pancakes. Makes 8 servings.
