Meat and Potato Soup

Meat and Potato Soup
Ingredients
1/2 lb. ground beef or turkey
1/2 cup green bell pepper (optional) chopped
1 (14.5- oz.) can each: low-sodium beef broth and Raleys Diced Fire Roasted Tomatoes
1/4 cup instant mashed potatoes
2 cloves garlic minced
Directions
Cook 1/2 lb. ground beef or turkey and 1/2 cup chopped green bell pepper (optional) in a medium saucepan until meat is cooked through. Drain excess fat and add 1 (14.5-oz.) can each: low-sodium beef broth and Raleys Diced Fire Roasted Tomatoes. Stir in 1 cup instant mashed potatoes and 2 cloves minced garlic, and bring to a boil; reduce heat to low and cook for about 5 minutes or until slightly thickened. Season to taste with salt and pepper. Makes 4 servings.
