Thai Jasmine Rice

Thai Jasmine Rice
1 (14- oz.) can light coconut milk
1/2 cup water
1 cup jasmine rice
1/4 cup finely diced carrots
3/4 tsp. salt
1/3 cup cilantro chopped
1/3 cup green onions sliced
Bring 1 (14-oz.) can light coconut milk and 1/2 cup water to a boil in a medium
saucepan. Stir in 1 cup jasmine rice, 1/4 cup finely diced carrots and 3/4 tsp. salt.
Cook for 20 minutes or until rice is fully cooked. Gently stir in 1/3 cup each:
chopped cilantro and sliced green onions just before serving.

Makes 4 servings.
