Spicy Tortilla Casserole
Spicy Tortilla Casserole
Ingredients
1 (14.5- oz.) can Raley's Fire-Roasted Medium Salsa
1 (7 3/4- oz.) can El Pato Tomato Sauce (Salsa de Chile Fresco)
9 taco-size corn tortillas, divided
1 (16- oz.) can Raley's Mexican Style Refried Beans (spicy or regular)
1 cup shredded cheddar cheese, divided
2 cups cooked shredded chicken
lettuce (optional), shredded
sliced olives (optional)
Directions

Prep: 10 minutes, Cook: 30 minutes, Serves: 6

Preheat oven to 375°F and spray an 8-inch square baking dish with nonstick cooking spray. Combine salsa and tomato sauce in a small bowl. Place 3 tortillas on the bottom of prepared dish (tear to fit evenly). Top with beans, 1/3 of sauce and 1/3 of cheese. Place 3 more tortillas on top; top with chicken, 1/3 of sauce and 1/3 of cheese. Top with remaining tortillas, remaining sauce and remaining cheese. Bake for 30 minutes. Top with lettuce and olives, if you like.
