Spicy Sausage and Potatoes

Spicy Sausage and Potatoes
1 lb. hot Italian sausage
2 lbs. russet potatoes cut into 1/2-inch cubes
1 large onion chopped
2 tsp. dried basil
1/2 tsp. salt or to taste
Salt and freshly ground pepper to taste
Prep time: 10 minutes, Cook time: 50 minutes

Hot sausage is traditional in this recipe, but if
you're not fond of spicy foods, substitute sweet or
mild Italian sausage.

Crumble sausage into a large nonstick skillet.
Cook, stirring frequently, for 10
minutes. Remove from skillet with a slotted spoon
and keep warm. Drain fat from
skillet and add potatoes and onion; cook over
medium-high heat for 20 minutes,
stirring frequently. Stir in sausage, basil and salt;
cook over medium-low heat for
20 minutes more or until potatoes are cooked

Makes 8 servings.
