Mini Chicken and Waffles
Mini Chicken and Waffles
Ingredients
1½ cups finely chopped, cooked chicken
1 package Raley's Shredded Sharp Cheddar
3/4 cup barbecue sauce
1 (10.9- oz.) box Eggo Mini Waffles
1/2 cup thinly sliced green onion tops
Directions

Prep: 15 minutes, Cook: 7 to 9 minutes, Makes: 40 appetizers

1. Stir together chicken and barbecue sauce in a medium bowl. Microwave on HIGH for about 2 minutes to warm.

2. Toast mini waffles under the broiler or in the toaster until crisp; separate waffles.

3. Top with chicken mixture and a pinch of shredded sharp Cheddar cheese, if you like. Broil for a minute more to melt cheese.

4. Garnish with sliced green onions and serve immediately.
