Classic Swiss Fondue

Classic Swiss Fondue
1/2 lb. Gruyère cheese shredded
1/2 lb. Jarlsberg cheese shredded
2 tsp. McCormick Gourmet Collection Dry Mustard
2 tbsp. flour
2 cloves garlic peeled and halved
1-1/4 cups dry white wine
2 tbsp. Kirsch (cherry brandy)
French bread cubes
Once all the rage in the '60s and '70s, fondue is
back to warm up your holiday parties. It's perfect
for easy, intimate entertaining.

In a small bowl, toss together cheeses, mustard
and flour; set aside. Rub cut sides of garlic on
sides and bottom of a heavy saucepan or fondue
pot. Add wine and bring to a simmer. Add cheese
mixture, a handful at a time, stirring well after
each addition. Cook and stir over low heat until
cheese is fully melted and mixture is smooth. Stir
in Kirsch and cook for several minutes more, being
careful not to scorch the bottom. Keep cheese hot
and serve with cubes of French bread.

Makes 8 appetizer servings.
