Tortelloni Appetizer Skewers
Tortelloni Appetizer Skewers
Ingredients
1/4 cup extra virgin olive oil
1/4 cup fresh lemon juice
1/2 tsp. oregano
1/2 tsp. salt
1/4 tsp. pepper
1 (9- oz.) package three cheese tortelloni
1 (16- oz.) package Precious Mozzarella
Cheese cut in to 3/4 -inch cubes
1 (4.75- oz.) can jumbo ripe olives pitted
1 pint cherry tomatoes
Directions
 
Prep: 15 minutes  Marinate: 1 hour  Makes: 27 appetizer toothpicks or 9 servings 

1. In a small bowl, whisk together oil, lemon juice, oregano, salt and pepper; cover and refrigerate until ready to use. Meanwhile, cook pasta for 3 to 4 minutes; drain and rinse with cold water to cool.
2. Place pasta, cheese cubes, olives and tomatoes in a large resealable plastic bag; pour dressing over and seal bag. Refrigerate for at least 1 hour to chill and marinate. Just before serving, place tortelloni, cheese, olives and tomatoes on large toothpicks.
