Grilled Salmon Over Baby Greens
4 salmon fillets (about 6 oz. each)
1/2 cup extra virgin olive oil
1/4 cup white balsamic vinegar
1 tbsp. honey
1/2 tsp. salt
1/4 tsp. pepper
6 cups baby greens salad mixture
Prep time: 5 minutes
Cook time: 8 to 10 minutes

Rinse fish and pat dry. Combine oil, vinegar, honey, salt and pepper in a small bowl; mix well. Spoon about 1 tbsp. oil and vinegar mixture over each fillet. Place fish on an oiled grill about 4 to 6 inches above medium coals. Cook, turning once, about 8 to 10 minutes or until fish reaches an internal temperature of 150°F and flakes easily when tested with a fork. Divide greens among 4 plates and place fillets on top. Drizzle with remaining oil and vinegar mixture.

Makes 4 servings.
