Creamy Pasta with Grilled Chicken and Vegetables
Ingredients
3 tbsp. butter
1/4 cup shallots minced
2 cloves garlic minced
2 tbsp. flour
1/2 cup chicken broth
1/2 cup dry white wine
1 cup half-and-half
1 cup shredded Parmesan cheese shredded
1/2 tsp. salt
1/4 tsp. pepper
8 oz. radiatore pasta cooked according to package directions
4 small chicken breasts boneless, skinless and grilled
4 cups fresh vegetables, (such as Mann's Broccoli Wokly, sliced mushrooms, slivered red bell pepper and julienne carrot strips) steamed or sautéed
fresh basil chopped
Parmesan cheese shredded
Directions
Prep time: 10 minutes
Cook time: 20 minutes

Melt butter in a medium saucepan. Add shallots and garlic; sauté over medium-low heat for 2 to 3 minutes. Stir in flour and cook for 1 minute more. Whisk in broth and wine until smooth; stir in half-and-half. Bring mixture to a boil; reduce heat and simmer for 2 to 3 minutes. Stir in 1 cup Parmesan cheese, salt and pepper; cook, stirring frequently, until cheese is melted. Pour hot sauce over hot cooked pasta, chicken and vegetables; toss to coat. Sprinkle with fresh basil and serve with Parmesan cheese.

Makes 6 servings.
