Grilled Lemon Chicken
1 ea whole chicken cut up
2 ea lemons thinly sliced
1/2 cup white wine
1/4 cup fresh rosemary snipped
1/2 tsp. salt & pepper each
3 large cloves garlic minced
Place all ingredients in a zip lock bag and seal. Squeeze
stages for several minutes to release juices from lemons and
to rub marinade into chicken. Place in refrigerator
overnight to marinate. Place chicken on grill over medium
coals and cook 15 to 20 minutes, brushing with marinade and
turning occasionally, until juice of chicken is no longer
pink when centers of thickest pieces are cut. Discard any
remaining marinade. Makes 6 servings. For moist chicken,
microwave on HIGH for about 5 minutes before grilling.
