Tangy Lemon Chicken with Fresh Herbs
2 tbsp. butter
4 chicken breast fillets, pounded to 1/2-inch thick
Salt and pepper to taste
1 fresh lemon
1/4 cup chicken broth
1/2 tsp. sugar
2 tbsp. fresh herbs such as basil, thyme, rosemary and marjoram chopped
Prep time: 10 minutes

Cook time: 15 minutes

Melt butter in a large skillet. Sprinkle chicken with
salt and pepper. Add chicken to pan and cook over
medium high heat for about 5 minutes per side,
until chicken is browned and cooked to an internal
temperature of 165°F. Remove from pan and keep
warm. Squeeze lemon juice into pan; add chicken
broth and sugar. Cook for about 5 minutes longer
or until most of the liquid has evaporated. Stir in
herbs and return chicken to pan. Cook 1 minute

Makes 4 servings.
