Pumpkin Cookie Pizza
1-1/4 cups brown sugar packed
1/2 cup butter softened
3/4 cup canned pumpkin
1 egg
1 tsp. vanilla extract
2 cups flour
1 cup quick oats
1 tsp. cinnamon
1 tsp. baking soda
1/4 tsp. salt
1-1/2 cups cream cheese frosting
chopped nuts
shredded coconut
chocolate chips
Prep time: 10 minutes
Bake time: 15 to 20 minutes
Cool time: 1 hour

Preheat oven to 375°F. Spray a 14-inch pizza pan with non-stick spray; set aside. In a large bowl, cream together brown sugar and butter until light and fluffy. Stir in pumpkin, egg and vanilla; mix well. Combine all dry ingredients in a small bowl and stir into pumpkin mixture. Spread dough into a 12-inch circle in prepared pan. Bake for 15 to 20 minutes or until cooked through. Let cool completely. Spread frosting over top, leaving a 1-inch rim around the edge. Sprinkle with desired toppings.

Cut into 12 wedges.
