Pumpkin Parfaits
1 (3.4- oz.) package Jell-O Instant Vanilla Pudding
2 cups skim milk
1 cup canned pumpkin
1 (12- oz.) container whipped topping
Ground cinnamon
Prep time: 10 minutes
Chill time: 10 minutes

In a medium bowl, combine pudding mix and milk; beat with a whisk for 2 minutes to blend. Stir in pumpkin, then fold in 1 cup of the whipped topping. Cover and refrigerate for 10 minutes. Spoon half of the pudding mixture into 8 small parfait dishes or cups. Top with remaining whipped topping, then with remaining pudding. Dust lightly with cinnamon and chill until ready to serve.

Makes 8 servings.
