Cashew Chicken Salad
Cashew Chicken Salad
1 cold rotisserie chicken
3/4 cup cashews, coarsely chopped
3/4 cup chopped celery
1/2 cup minced red onion
3/4 cup light sour cream
1/4 cup light mayonnaise
2 tbsp. lemon juice
3/4 tsp. dry tarragon
1/4 tsp. pepper
Salt to taste

Prep: 15 minutes, Chill: 1 hour, Serves: 6

1. Remove and discard skin and bones from chicken and tear meat into bite-size pieces. Place in a large bowl with cashews, celery and onion.

2. Whisk together remainingingredients in a medium bowl and stir into chicken. Chill for 1 hour to allow flavors to blend.

3. Serve over greens, or spoon into tomato cups, croissants or pita bread.
