Fresh Herb Vinaigrette
1/2 cup balsamic vinegar
1-1/2 tbsp. Dijon mustard
1/4 tsp. salt
1/4 tsp. pepper
1 cup olive oil
2 tbsp. hot water
2 to 3 tbsp. chopped fresh herbs (basil, tarragon, marjoram, oregano, parsley)
Prep time: 5 minutes

Whisk together vinegar, mustard, salt and pepper in a small bowl. Slowly whisk in oil, then hot water. Stir in herbs. Can be stored in the refrigerator for up to 1 week.

Makes about 1-1/2 cups.
