Indian Spiced Pork with Fruited Couscous

Indian Spiced Pork with Fruited Couscous
2 lbs. Raley's pork tenderloin
1 tbsp. garam masala
1½ tsp. garlic salt
1/2 tsp. cinnamon
1/2 tsp. coarse ground pepper
1 tbsp. olive oil
1/2 cup orange juice
3¼ cups chicken stock or reduced-sodium broth
2 tbsp. butter
1 (12- oz.) box plain couscous
1/3 cup golden raisins
1/3 cup dried currants
1/3 cup sliced green onion tops

Prep: 20 minutes, Cook: about 45 minutes, Serves: 6 to 8

1. Rinse pork and pat dry. Stir together garam masala, garlic salt, cinnamon and pepper in a small bowl. Set aside 1 tsp. and rub the remaining mixture onto the pork.

2. Cook pork in hot oil over medium-high heat in a large nonstick skillet until well browned on all sides.

3. Cover and cook over low heat for 15 minutes. Add orange juice to skillet; cook, uncovered, for 5 to 10 minutes more or until liquid is reduced to a glaze and meat reaches 145°F internally.

4. While pork is cooking, bring chicken stock, butter and reserved 1 tsp. seasoning mixture to a boil in a medium saucepan. Stir in couscous and fruit; cover and remove from heat.

5. Let stand for 5 minutes, then add green onions and fluff with a fork. Serve thin slices of pork over couscous.
