Homemade Turkey Jerky
2½ lb. (approx.) fresh, uncooked turkey breast
1/2 cup water
2 tbsp. dark brown sugar firmly packed
2 tbsp. salt
1 tsp. pepper
1 tsp. liquid smoke
1/4 tsp. garlic powder
1/4 tsp. onion powder
Prep: 15 minutes Cook: 3 to 5 hours Makes: 3 cups or 14 oz.
Chill: at least 1 hour
1. Rinse, dry and slice meat into 1/8- to 1/4-inch-thick slices. Mix remaining ingredients in a medium bowl. Add turkey and toss to coat. Cover and chill at least 1 hour or until most of the liquid is absorbed.
2. Spray 2 cookie sheets with nonstick cooking spray. Remove turkey strips from marinade, shaking off excess. Lay strips close together, but not overlapping, on cookie sheets. Place in preheated 160°F to 200°F oven. Cook until jerky cracks and breaks when bent, 3 to 5 hours.
3. Remove from oven and let cool. Serve or store in a resealable plastic bag or airtight container in a cool, dry place up to 3 weeks, in the refrigerator several months or longer in the freezer.
