Gumbo Jumbo's Blackened Catfish
1 tbsp. paprika
1/2 tbsp. salt
1/2 tbsp. onion powder
1/2 tbsp. cayenne pepper
1/2 tbsp. white pepper
1/2 tbsp. black pepper
1/2 tsp. dried thyme leaves
1/2 tsp. dried oregano
2 (5- to 8- oz.) catfish fillets, rinsed and patted dry
6 tbsp. unsalted butter (or olive oil), divided
Lemon wedges (optional)

Prep: 10 minutes, Cook: about 15 minutes, Serves: 2

Stir together all seasonings in a small bowl. Coat fillets liberally on both sides with seasoning mixture. Place a large cast iron skillet over medium-high heat for 2 to 3 minutes. Add 3 tbsp. butter in pan and immediately add one fillet. Cook for about 3 to 5 minutes per side or until fish is opaque. Repeat with remaining butter and fillets; serve with lemon wedges, if desired.
