Creole Potatoes and Eggs

Creole Potatoes and Eggs
2 tbsp. butter
4 oz. diced Yukon Gold or russet potatoes
1½ tsp. Tony Chacheres Creole Seasoning
1/3 cup chopped ham
1/3 cup chopped bell pepper
8 eggs

Prep: 5 minutes, Cook: about 20 minutes, Serves: 4 to 6

1. Melt butter in a medium skillet. Stir in potatoes and Creole seasoning. Reduce heat to low and cook, covered, for 10 minutes, stirring occasionally, or until potatoes are cooked through.

2. Add ham and bell pepper and cook for 5 minutes more. Stir in eggs; cook and stir for 3 to 5 minutes or until eggs are set.
