Zucchini and Tomato Skillet
Zucchini and Tomato Skillet
2 tbsp. butter
2 cups each: zucchini and yellow squash sliced
2 tsp. Tony Chacheres Creole Seasoning
1 cup tomato chopped
1/3 cup Parmesan cheese shredded

Melt 2 tbsp. butter in a large skillet. Add 2 cups each: sliced zucchini and yellow squash; cook and stir for 5 minutes or until crisp-tender. Stir in 2 tsp. Tony Chacheres Creole Seasoning and toss well to coat. Sprinkle with 1 cup chopped tomato and 1/3 cup shredded Parmesan cheese; cover and cook for 5 minutes more. Makes 6 servings.
