Cranberry Orange Breakfast Barley

Cranberry Orange Breakfast Barley
3 cups water
1 cup barley (bulk bin # 744), rinsed and drained
2 cups orange juice
1/2 cup dried cranberries (bulk bin # 608)
3 tbsp. honey
1/4 tsp. cinnamon

Prep: 5 minutes, Cook: 45 minutes, Serves: 3

1. Place water and barley in a medium saucepan and bring to a boil. Reduce heat and simmer, covered, for 30 minutes, stirring occasionally.

2. Stir in remaining ingredients and continue cooking over low heat, uncovered, for 15 minutes or until most of the liquid has been absorbed and the barley is thick and creamy.

I love barley and anything with "cranberry and orange" flavors. I had hoped this recipe would meet my expectations and it did. I might even say it exceeded my expectations. The flavors are delicious and it keeps well for several days with the same great flavors if you're the only one in the house that likes barley. It says "makes 3 servings", but they are very generous servings. I'd say it could feed 4 to 6.

Love this Recipe & its so versatile. I have made it with apple juice + mixed dried fruit. It was a bit too sweet for me so I leave the honey out of the cooking stage and just drizzle a tiny bit over the top when I re-heat it. I agree that it will feed more - I get 4 servings & it keeps well in the fridge. Great with some sliced almonds and a bit of almond milk over the top.
