Firehouse Hummus

Chipotle Garlic Hummus
2 (15- oz.) cans garbanzo beans, rinsed and drained
5 tbsp. lemon juice
1/4 cup tahini paste
3 tbsp. olive oil
1½ tsp. ground cumin
5 cloves garlic, coarsely chopped
1 to 2 canned chipotle peppers plus 2 tbsp. adobo sauce from can
Salt to taste

Prep: 10 minutes, Makes 2½ cups

1. Puree all ingredients in a blender or food processor until very smooth.

2. Transfer to a bowl; cover and refrigerate until ready to serve. (May be prepared several days ahead.)
