Crunchy Vegetable Raisin Slaw
Ingredients
2½ tbsp. plain fat-free yogurt
2½ tbsp. honey
2½ tbsp. cider vinegar
1 cup green cabbage finely chopped
1 cup purple cabbage finely chopped
1/4 cup red bell pepper finely chopped
1/4 cup green bell pepper finely chopped
1/4 cup jicama finely chopped
1/4 cup carrots finely chopped
1/4 cup broccoli finely chopped
1/2 cup golden raisins
Directions

Prep time: 10 minutes Whisk together yogurt, honey and vinegar in a medium bowl; stir into vegetable blend and raisins. Serve immediately. Makes 6 to 8 servings.
