Grilled Yams with Greens
Grilled Yams with Greens
2 lbs. jewel (or garnet) yams
3½ tbsp. extra virgin olive oil divided
Salt and pepper to taste
3 tbsp. balsamic vinegar
Freshly ground salt and pepper to taste
1/2 of a 5- oz. bag Ready Pac Baby Arugula
1/2 cup dried cherries
1/2 cup coarsely chopped pistachio nuts

Prep time: 15 minutes, Cook time: about 10 minutes

Peel yams and slice 1/2-inch thick. Place in a large bowl and toss with 1/2 tbsp. oil, salt and pepper. Grill over medium heat for about 10 minutes, turning occasionally, until tender and lightly charred; remove from grill. Whisk together remaining oil, vinegar, salt and pepper in a large bowl. Add yams and toss lightly. Add arugula, cherries and pistachios to bowl and toss again.

Makes 6 to 8 servings.
