Grilled Mango Salad Pizza

Grilled Mango Salad Pizza
Ingredients
Dressing:
1½ tbsp. extra virgin olive oil
1½ tbsp. white balsamic vinegar
1/2 tbsp. honey
Salt and freshly ground pepper to taste
Pizza:
1 Mama Mary's Thin and Crispy Pizza Crust (1/2 of a 16- oz. package)
Extra virgin olive oil
4 oz. fresh mozzarella cheese
2 cups lightly packed Earthbound Farm Fresh Herb Salad Blend
8 strips bacon (optional) cooked crisp and broken into 1/2-inch pieces
1 large firm but ripe mango peeled, pitted and cut into small bite-size pieces
1/4 cup minced red onion
Directions

Prep time: 15 minutes
Cook time: 6 to 7 minutes

Whisk together all dressing ingredients in a medium bowl; set aside. Cut pizza crust into 8 equal wedges and brush both sides lightly with olive oil. Grill over medium-high heat for 1 to 2 minutes or until crisp on the bottom. Turn and top each wedge with equal amounts of cheese. Move to indirect heat (or over a burner that is off) and cook for about 5 minutes more to melt cheese; remove from grill. Place remaining salad ingredients in bowl with dressing and toss well to coat. Pile onto pizza wedges and serve immediately.

Makes 8 pieces.
