Strawberry Daiquiri Mousse Pie

Strawberry Daiquiri Mousse Pie
1 (10- oz.) can frozen strawberry daiquiri mix, thawed, divided
1 envelope unflavored gelatin
3 cups diced fresh strawberries
2 tbsp. rum (optional)
3 cups whipping cream
1/2 cup powdered sugar
1 pie crust
Additional strawberries (optional garnish)

Prep: 15 minutes, Cook: about 5 minutes, Chill time: about 8 hours
Serves: 8 to 10

Place 1/4 cup daiquiri mix in a medium saucepan; sprinkle gelatin on top and let stand for 2 minutes. Add remaining daiquiri mix and bring to a boil over high heat, stirring occasionally. Transfer to a bowl and stir in strawberries and rum; let cool to room temperature. Beat cream and sugar to stiff peaks and fold into strawberry mixture. Place in prepared crust, piling high into the center and refrigerate for about 8 hours or until firm. Top with additional berries before serving, if you like.
