Spicy Oven Fried Chicken with Cool Cilantro Sauce
Ingredients
1/2 cup Straus Family Creamery Organic Plain Yogurt
1 tbsp. lemon juice
1/2 tbsp. minced garlic
1 tsp. McCormick Chipotle Chile Pepper divided
1/2 tsp. salt
1 whole cut up chicken
1¼ cups panko breadcrumbs (in our Asian foods section)
1/2 cup grated Parmesan cheese
2/3 cup flour
2 eggs beaten
1 cup fresh cilantro
1/2 cup coarsely chopped green onions
1 cup Straus Family Creamery Plain Yogurt
Directions

Prep time: 20 minutes
Marinate and stand time: 55 minutes
Cook time: 35 minutes

Stir together yogurt, lemon juice, garlic, 3/4 tsp. chipotle pepper and salt in a medium bowl; add chicken and refrigerate for 45 minutes. Stir together breadcrumbs, Parmesan cheese and remaining chipotle pepper in a medium bowl. Preheat oven to 400°F and line a baking sheet with foil sprayed with nonstick cooking spray. Remove chicken from marinade and shake off excess; dredge in flour. Dip in beaten egg and coat with breadcrumb mixture; place on prepared sheet and let stand for 10 minutes. Bake for 35 minutes or until chicken is cooked through.

Serve with Cool Cilantro Sauce:
Finely chop 1 cup fresh cilantro and 1/2 cup coarsely chopped green onions in a food processor. Stir in 1 cup Straus Family Creamery Plain Yogurt; season to taste with salt.

Makes 4 to 6 servings.
