1/4 cup butter softened
1 large egg
1 cup flour
3 tbsp. sugar
1/4 tsp. salt
1/8 tsp. baking powder

Prep time: 15 minutes, Cook time: about 15 minutes

Beat butter with an electric mixer in a medium bowl until creamy. Beat in egg (mixture will look curdled); add remaining ingredients. Beat for several minutes or until mixture resembles coarse cornmeal; gather into a ball. Knead several times. (Dough may be wrapped and refrigerated at this point until ready to bake.) Roll out into an 11-inch circle on a lightly floured surface. Line a 9-inch deep dish pie plate with pastry and fold edges under; flute edges decoratively. To pre-bake crust, prick bottom with a fork and line with foil or parchment paper; fill with dry beans or pie weights. Bake in a preheated 400°F oven for 10 minutes; remove beans and foil and bake for 3 to 5 minutes more or until bottom is lightly browned.

Makes 1 pie crust.
