Mango Mint Chutney
Mango Mint Chutney
2 large ripe mangoes peeled, pitted and chopped
1/4 cup minced onion
1/4 cup lime juice
3 tbsp. honey
1½ tsp. grated fresh ginger
1 tsp. chopped fresh mint or to taste

Cook time: about 10 minutes
Cool time: 30 minutes

Stir together all ingredients except mint in a medium saucepan. Bring to a boil; reduce heat slightly and cook, uncovered, over medium-high heat for 10 minutes or until excess liquid has cooked off. Remove from heat and let cool before adding mint. Serve with ham, roasted pork or poultry.

Makes about 1½ cups.
Recipe may be doubled.
