Mango Mint Chutney

Mango Mint Chutney
2 large ripe mangoes, peeled, pitted and chopped
1/4 cup minced onion
1/4 cup lime juice
3 tbsp. honey
1½ tsp. grated fresh ginger
1 tsp. chopped fresh mint or to taste

Cook: about 10 minutes, Cool: 30 minutes
Makes about 1½ cups (recipe may be doubled)

1. Stir together all ingredients except mint in a medium saucepan. Bring to a boil; reduce heat slightly and cook, uncovered, over medium-high heat for 10 minutes or until excess liquid has cooked off.

2. Remove from heat and let cool before adding mint. Serve with ham, roasted pork or poultry.
