Antipasto Salad
Antipasto Salad
1/4 cup extra virgin olive oil
1/4 cup balsamic vinegar
1 tbsp. Nob Hill Trading Co. Dijon Mustard
1 tsp. basil
Salt and pepper to taste
1 (6- oz.) bag Dole Italian Blend Salad
2 medium tomatoes cut into wedges
1/2 small red onion peeled and thinly sliced
1/2 cup light salame sliced strips
1/2 cup mozzarella cheese small chunks
1/4 cup ripe olives sliced
1/4 cup pepperoncini sliced
Prep time: 10 minutes

Combine oil, vinegar, mustard, basil, salt and pepper in a small bowl; whisk to blend and set aside. Place remaining ingredients in a salad bowl; drizzle with dressing and toss well to coat.

Makes 6 side-dish servings.
