Crab Cocktail with Avocado-Wasabi Mousse
Crab Cocktail with Avocado-Wasabi Mousse
1 lb. crab meat
2 tbsp. chives thinly sliced
2 tbsp. rice vinegar
Avocado-Wasabi Mousse (recipe follows)
1½ cups salsa fresca
Cilantro sprigs (optional for garnish)
12 Terra Original Taro Chips (optional for garnish)
Green onion (for garnish) cut in 2 -inch lengths
1 avocado (for garnish) diced

Prep: 10 minutes Makes: 6 servings

1. Just before serving, combine crab, chives and vinegar; reserve.
2. Scoop 1/4 cup Avocado-Wasabi Mousse into each of 6 martini glasses or other stemmed glassware. Top each with 1/4 cup salsa fresca.
3. Scoop 1/4 cup reserved crab mixture on top of salsa in each glass. Garnish each serving with 2 sprigs cilantro, 2 taro chips, several green onion or chive pieces and several avocado cubes.
Avocado-Wasabi Mousse:

1. Puree until smooth 3 roughly diced avocados, 1/2 tbsp. hot pepper sauce, 1/2 tbsp. wasabi paste (1/2 tbsp. water mixed with 2 tsp. McCormick wasabi powder) and 1/2 tsp. salt; set aside.
2. Whip 1/3 cup heavy cream; fold into avocado mixture. Prepare just before serving.
