Broiled Gingered Grapefruit

Broiled Gingered Grapefruit
If you think all grapefruit packs a pucker,
you're in for a sweet surprise. Many
varieties - especially the Rio Star -
contain an abundance of natural sugars, and
all offer lycopene, an antioxidant believed
to reduce the risk of certain cancers. No
matter what variety you prefer, be sure to
choose firm, well-shaped fruit that is heavy
for its size.
Cut 2 large Rio Star or ruby red grapefruit in half, then cut between membranes to separate the sections. Mix together 2 tbsp. brown sugar and 1-1/2 tbsp. finely chopped crystallized ginger; sprinkle over grapefruit. Place under broiler about 4 inches from heat and cook for 2 to 3 minutes or until hot and bubbly.

Makes 4 servings.
