Super Pretzels

Super Pretzels
1 (25- oz.) package frozen rolls thawed but very cold
3 quarts water
2 tbsp. salt
1 ea egg white beaten with 1 tbsp. water
Coarse sea salt
Melted butter (optional)

Prep: 30 minutes Cook: 45 minutes Makes: 12 servings

1. Push two rolls together and roll into a 24-inch long rope on a lightly floured board. Twist into a pretzel shape and place on a large baking sheet heavily dusted with flour.
2. Repeat with remaining dough. Set pretzels aside to rise for 15 minutes. Meanwhile, bring 3 quarts water and 2 tbsp. salt to a boil in a large stockpot; preheat oven to 350°F.
3. Carefully drop pretzels into boiling water, cooking just a few at a time. Boil for 2 minutes, then carefully flip and boil for 2 minutes more. Remove from water with a slotted spoon and let drain on a clean, smooth dishcloth or paper towels; let cool slightly.
4. Place pretzels on 2 baking sheets sprayed with nonstick cooking spray. Brush with egg white then sprinkle lightly with coarse salt. Bake for 25 minutes or until pretzels are golden brown and no longer doughy. Brush hot pretzels with melted butter, if desired.
