Raspberry Vinaigrette
1/2 cup olive oil
1/2 cup raspberry vinegar
1-1/2 tsp. sugar
1/2 tsp. salt
pepper freshly ground
Prep time: 5 minutes

Whisk together all ingredients in a small bowl. Serve immediately or store in a tightly sealed jar in the refrigerator.

Makes about 1 cup.

Drizzle over endive or mixed greens topped with glazed walnuts or pecans, thinly sliced pears, red onion and strips of cooked chilled beets, if desired.
