Southwest Surprise
Ingredients
1 (14- oz.) package Gimme Lean sausage (see note)
1 onion peeled and coarsely chopped
1 (15- oz.) can no-salt-added diced tomatoes
1 (15- oz.) can no-salt-added corn drained
1 (15- oz.) can reduced-sodium kidney beans rinsed and drained
2 (8- oz.) cans no-salt-added tomato sauce
1 (6- oz.) can toma to paste
1/4 cup red wine
1 tsp. chili powder
2 cups shredded light Cheddar cheese divided
1 (15- oz.) package Krusteaz Honey Cornbread & Muffin Mix
1 cup skim milk
2 ea egg whites or 1/4 cup egg substitute
Directions
Prep time: 15 minutes
Cook time: 25 to 30 minutes

Preheat oven to 400°F. Spray a 13-by-9-inch baking pan with nonstick cooking spray; set aside. Combine Gimme Lean, vegetables, beans, tomato sauce, tomato paste, wine and chili powder in a large skillet; cook over medium-high heat until hot and bubbly. Pour into prepared pan and sprinkle with 1 cup cheese. In a medium bowl, stir together cornbread mix, milk and egg whites, stirring just until dry ingredients are moistened. Spread over mixture in pan and sprinkle with remaining 1 cup cheese. Bake for 25 to 30 minutes or until cornbread is golden brown and a toothpick inserted in the center comes out clean.
