Creamy Garbanzo Soup

Creamy Garbanzo Soup
1 (16- oz.) package Raley's Garbanzo Beans (dry)
1 (48- oz.) container chicken broth
4 cloves garlic chopped
3 carrots peeled and sliced
1 large onion chopped
1½ tsp. ground cumin
1½ tsp. ground coriander
1 tsp. garam masala (on the spices aisle)

Prep time: 20 minutes, Soak time: 1 hour to overnight
Cook time: 1 hour, 10 minutes

Soak or quick soak beans according to package directions; drain well, then place in a large saucepan with broth, garlic, carrots and onion. Bring to a boil; reduce heat and simmer, covered, for 1 hour or until beans are very tender. Puree in a blender, food processor or with an immersion blender until very smooth. Place back in pan and add seasonings; cook for 10 minutes more.

Makes 8 servings.
