Edamame Quinoa Salad

Edamame Quinoa Salad
1-1/3 cups water
1 cup Bob's Red Mill Organic Quinoa, rinsed in a fine mesh sieve
1/2 cup Organicville Miso Ginger Dressing
1/2 cup Seapoint Farms Organic Shelled Edamame
1/2 cup 1/4-inch diced red bell pepper
2 tbsp. chopped fresh cilantro
2 tbsp. Grama's Sweet Chilli Sauce
1 tbsp. soy sauce
1/2 cup slivered almonds, toasted

Prep: 20 minutes, Cook/Stand: 22 minutes
Chill: several hours, Serves: 6

1. Bring water to a boil in a medium saucepan. Stir in quinoa and simmer, covered, for 10 minutes. Remove from heat and let stand for 12 minutes, then fluff with a fork and let cool.

2. Place in a large bowl and stir in remaining ingredients except almonds. Cover and chill for several hours.

3. Top with almonds just before serving.

This was a really really good salad. Loved all the flavors and textures.
