Baja Bulgur Salad

Baja Bulgur Salad
Ingredients
1-2/3 cups boiling water
1 cup bulgur (bulk bin #606)
3 tbsp. lime juice
3 tbsp. olive oil
1/2 tsp. Simply Organic Chili Powder
1/2 tsp. cumin
1/2 tsp. sugar
1/3 cup minced red onion
1/2 tsp. garlic salt
1/3 cup minced bell pepper
1 avocado, diced
Chopped fresh cilantro (garnish)
Directions

Prep: 20 minutes, Stand: 30 minutes, Serves: 4 to 6

1. Pour water over bulgu; cover and let stand for 30 minutes.

2. Stir in lime juice, olive oil, chili powder, cumin, garlic salt and sugar. Carefully stir in onion, bell pepper and avocado. Season to taste with chopped fresh cilantro.
