Baja Bulgur Salad

Baja Bulgur Salad
Ingredients
1 2/3 cups boiling water
1 cup bulgur (bulk bin #606)
3 tbsp. lime juice
3 tbsp. olive oil
1/2 tsp. Simply Organic Chili Powder
1/2 tsp. cumin
1/2 tsp. sugar
1/2 tsp. garlic salt
1/3 cup minced red onion
1/3 cup minced bell pepper
1 avocado diced
fresh cilantro
Directions

Prep time: 20 minutes, Stand time: 30 minutes

Pour 1 2⁄3 cups boiling water over 1 cup bulgur (Natural Foods Dept. bulk bin #606); cover and let stand for 30 minutes. Stir in 3 tbsp. each: lime juice and olive oil and 1/2 tsp. each: Simply Organic Chili Powder, Cumin, Garlic Salt and sugar. Carefully stir in 1/3 cup each: minced red onion, minced bell pepper and 1 diced avocado. Season to taste with chopped fresh cilantro.

Makes 4 to 6 servings.
